Avocado Breakfast Pizza

Avocados + bacon + cheese + eggs + pizza.  Need I say more?  It’s the best of the breakfast world combined with one of dinner’s finest foods.  I will be the first to admit – this is definitely not a low calorie food, but sometimes you’re in the mood to splurge for Sunday brunch or maybe you are under your daily calories and need a calorie-dense, high fat meal.  Cue this breakfast pizza.  I love everything about this because it is full of healthy fats and tastes delicious.  You could easily customize the toppings (perhaps crumbled sausage or shredded chicken in place of the bacon?) as well to make this one of your family’s favorite pizzas.

I began by gathering all the ingredients shown above and pre-heating my oven to 425°F.

Next I prepared my pizza crust inspired by the recipe for Fathead pizza.  I microwaved the cream cheese and mozzarella cheese for 45 seconds until softened, added the almond flour, egg, salt, pepper and Italian seasoning and stirred until the ingredients formed a ball of dough.

I lined a baking sheet with parchment paper and sprayed with non-stick spray before turning the pizza dough out onto the sheet and forming a long rectangle shape.  I smoothed out the top and squared up the edges before baking on its own for 12 minutes until lightly golden brown.  While the crust was baking, I cooked the bacon in the microwave for 5 minutes until crispy and set aside to cool.

Next I sliced the avocados in half, removed the pits and diced them into chunky pieces.

I added the avocado to my food processor and drizzled in the olive oil.

I seasoned the avocado with salt and pepper and blended everything together until practically smooth.  You may need to add a bit more oil if your avocados are not fully ripe.

Once the crust cooled slightly, I used a spatula to spread the avocado out across the dough, crumbled the bacon and sprinkled the shredded cheddar jack cheese on top.  I popped the pizza back into the oven for 7 minutes until the cheese was fully melted.

While the pizza was back in the oven, I heated a pan to medium low heat and melted the butter.  Next I fried three eggs until the whites were fully cooked and the yolks were mostly set, about three minutes per side.  I seasoned them with salt and pepper and then placed them on top of the pizza when I pulled it out of the oven.  I love a slightly runny egg yolk, but you could fry these to your liking or omit them completely.  I will say, the best bites of this pizza were with the eggs, so I recommend including them however you’d like.  The avocado is creamy, the bacon is crunchy, the cheese is….cheesy and everything is held together on a delicious, crispy pizza crust.  This is a must-try!

Avocado Breakfast Pizza

Ingredients

  • 4 eggs
  • 1c almond meal/flour
  • 1.5c shredded mozzarella cheese
  • 4oz cream cheese
  • 2 Hass avocados
  • 1/4c extra virgin olive oil
  • 4 slices thick cut bacon
  • 1/2c shredded cheddar jack cheese
  • 1tblsp unsalted butter
  • 1/2tsp Italian seasoning
  • To Taste
  • Salt
  • Pepper

Instructions

  1. Pre-heat the oven to 425°F.
  2. Soften the cream cheese and mozzarella cheese in the microwave for about 45 seconds until slightly melted.
  3. Add in the almond flour, egg, Italian seasoning, salt and pepper and stir until it forms a ball of dough.
  4. Line a baking sheet with parchment paper and coat with non-stick spray.
  5. Pour the dough onto the baking sheet and use a spatula to form into a long, even rectangle.
  6. Bake for 12 minutes until lightly golden brown.
  7. Cook the bacon in the microwave for about 5 minutes until crispy; set aside to cool.
  8. Split the avocados in half, remove the pits and score the flesh with a knife; use a spoon to scoop out the the meat into a food processor.
  9. Add the olive oil, salt and pepper to the avocado and blend until smooth.
  10. Spread the avocado mixture over the crust, crumble the bacon and sprinkle the shredded cheddar jack cheese on top.
  11. Return the pizza to the oven an additional 7 minutes until the cheese is melted.
  12. Melt the butter in a pan over medium low heat.
  13. Fry the eggs about 3 minutes per side for slightly runny yolks.
  14. Add the eggs to the top of the pizza before serving.

Per serving: 834 calories, 17g total carbs, 9g net carbs, 76g fat, 36g protein (Note: Please remember these numbers are based on the brands I used and may vary slightly with other brands.)

    Well, if this isn’t the BOMB I don’t know what is. I cannot wait to put this together for midnight meal or Brunch. Crunchy, creamy, and EGGS on top. Divine.

    Looks very interesting. But I have some questions. Is it one egg that goes in the dough? And the other three then are part of the topping? Is that correct? And how many servings does this make? Thanks.

    • Hi Elaine. Yes one egg in the dough and the other three on top. You would slice this into 8 rectangles and each serving is 2 pieces. Thanks!
